Central Production Kitchen Renovation and Expansion

As prime consultant, Kibart designed the renovation and expansion of the Eastern Correctional Institution Central Production Kitchen to eliminate existing Health Code and Hazard Analysis Critical Control Point violations and provide the facility with extended capacity to prepare over 9,000 meals per day.

Design Features:

  • Continuous uninterrupted food processing operation throughout entire renovation and expansion
  • Extended capacity to prepare meals for a new 420-bed minimum security facility
  • Cook/Chill Technology enhanced the increased meal production capacity
  • Corrected the kitchen hood exhaust system and various other building deficiencies
  • Installed new kitchen equipment and refurbished existing kitchen equipment and systems
  • Expansion of 5kv unit substation capacity
  • Fire alarm system
  • Electrical distribution system employing prioritized load shedding for emergency power operation
  • Central ice builder and storage system for food process chillers
